I like to lighten things up when I can, so I use egg substitute, reduced fat sausage and less than half of the cheese detailed in the recipe. You won't miss the extra calories! I haven't had much luck with reduced fat crescent rolls, so I'll leave that gamble up to you.
You can make it your own recipe by adding spinach, mushrooms, peppers, onions, tomatoes etc... Use this as a base recipe to make something extra special and be sure to share your ideas!
This can just nearly be assembled in the amount of time it takes for your oven to preheat! I *heart* recipes like that.
To make a simple fruit salad to go with your breakfast casserole, combine your favorite fresh fruits and a container of lemon or vanilla yogurt. Everyone will be asking you what you put in your "dressing." Hehehe...

Recipe
1 package refrigerated crescent roll dough
12 oz reduced fat sausage, ham or bacon
2 1/2 c egg substitute (like Egg Beaters) or 8-10 eggs
1/4 c milk
1 tsp dried oregano
1 1/2 c monterrey jack/ cheddar cheese blend
- Cook sausage or bacon and crumble.
- Preheat oven to 325 degrees and lightly spray a 9 x 13 baking dish with cooking spray.
- Unroll crust and press into dish. Press all of the seams together. Spread meat over crust and sprinkle with cheese. Combine egg substitute, milk and oregano and pour over casserole.
- Bake 25- 30 minutes until a knife inserted in the center comes out clean.
